Chicken Chow Mein
Chicken Chow Mein is a quick-stir-fried noodle made in less than 30 minutes. The most flavoring in this dish is the sauce prepared for Chow Mein.
This version of Chow Mein is Indo- Chinese recipe that is popular in India.
All the sauces that are used in this recipe are easily available in the pantry. Oyster sauce is one extra fancy ingredient used. Please don’t worry if you don’t have that in your stock. The Hoisin sauce is a replacement for Oyster Sauce, or you can skip the sauce. Oyster sauce does not smell or taste like an oyster when the finished product is ready.
There are several varieties of Chow Mein available in the market. Make sure to use the one that says Cho Mein as it is different from the other variables like Yakisoba, Sara udon, Yaki udon, egg noodles, etc.
There is a commonality and a difference between how Mein and Lo Mein.
Lo mein means “tossed noodles,” while chow mein or Chao Mian means “fried noodles.” So essentially, it’s the way the noodles are prepared that makes them different.
Both Cho Mein and Lo Mein noodles contain wheat, flour, and eggs.

Ingredients
Chicken- 1 lb (boneless chicken thighs)
Salt- 1/2 tsp
Black Pepper- 1/2 tsp
Light Soy Sauce- 2 Tbsp
Dark Soy Sauce- 2 Tbsp
Oyster Sauce- 2 Tbsp
Sesame Oil- 1 Tbsp
Chili Garlic Sauce- 1 tsp
Brown Sugar- 2 tsp (optional)
Mirin or rice wine vinegar- 2 Tbsp
Chow Mein noodles- 6 oz
Water to cook noodles- 3 quarts
Oil- 1 Tbsp + 2 Tbsp
Ginger- 1 Tbsp
Onion- 1 medium (diced)
Carrots- 1 cup (sliced)
Sugar Snap Peas- 1 cup
Red Bell Pepper- 1 cup
Bok Choy-1 cup
Bean Sprouts- 1 cup
Scallions or green onions- 1/2 cup
Cilantro- 1/2 cup
Instructions
1. Take 1 lb of boneless skinless chicken thighs. Add 1/2 tsp of salt and 1/2 tsp of black pepper. Mix well.
2. Preparing the sauce for the chicken and the veggies: In a bowl, take 2 Tbsp of light soy sauce, 2 Tbsp of dark soy sauce, 2 Tbsp of Oyster sauce, 1 Tbsp of sesame oil, 1 tsp of chili garlic sauce, 2 Tbsp Mirin or rice wine vinegar, and 2 tsp of brown sugar (optional). Mix everything well.
3. Pour half of the sauce into the chicken. Save the other half of the sauce to add to the veggies.
4. Mix the sauce and the chicken and marinate for 30 minutes.
5. In a pan, take 3 quarts of water and add 6 oz. of Chow Mein noodles. Follow the package instructions and cook accordingly.
6. Place the noodles on a sheet pan and spray oil so that the noodles do not dry out.
7. In a pan, take 1 Tbsp of oil and add the cooked marinated chicken. Cook the chicken for about 8 minutes or until the chicken is cooked. Set the chicken aside until ready to use.
8. In a wok, take 2 Tbsp of oil and add 1 Tbsp of grated ginger. Saute for few seconds.
9. Add one medium diced onion, 1 cup carrots, 1 cup sugar snap peas, 1 cup red bell pepper, and 1 cup bok choy. Sauté the veggies for 1 minute.
10. Add the reserved sauce to the veggies and cook for few seconds.
11. Now add the cooked chicken to the veggies and saute for two more minutes.
12. Add the cooked chow mein noodles and toss to combine everything well.
13. Add 1 cup of bean sprouts, 1/2 cup of scallions/green onions, and 1/2 cup of cilantro.
14. Mix everything and serve hot!
Notes
The best thing about Chow Mein is that it goes well with any veggies we have in stock at home. Some of the other vegetables you can add are broccoli, cauliflower, cabbage, peas, mushrooms, etc.
This sauce combination tastes good. If sensitive to spice, add the less chili-garlic sauce. If you do not smell of the Oyster sauce, Hoisin sauce is a good replacement.
It tastes better when chicken and vegetables are cooked separately. Cooking the chicken along with vegetables can make the veggies mushy.
It is best to serve the prepared noodles immediately. Chow Mein does not store well for a long time. To make this advance and store, keep the cooked noodles, chicken, and vegetables separately and mix it right before serving. Skipping the onions can increase the shelf life of noodles for few hours.
