Description

Ghee rice is a combination of ghee, basmati rice, and spices in one simple aromatic and tasty rice dish that goes with any sides. It is usually served with vegetable korma, sabzi (veggies cooked with spices, onion, tomatoes, ginger, and garlic), or dhal. This recipe is from the Southern part of India. The recipe of ghee rice in an Instant pot is a real time saver and can be ready in less than 20 minutes.


Ingredients

Basmati Rice- 1 1/2 cups

water- 3 cups to cook 

Garlic- 2 cloves

Green Chili- 2

Onion – 1 sliced

Lemon – 1 1/2 Tbsp

Raisins and Cashews- 1/4 cup

Cinnamon sticks- 2

Cloves- 5

Cardamon- 4

Star Anise- 2

Mustard Seeds- 1 tsp

Cumin – 1 tsp

Pepper Corns-  tsp

Bay Leaves- 5

Ghee- 2 Tbsp

Salt- 1 tsp


Instructions

1. Soak 1 1/2 cups of Basmati rice with 6 cups of water for 30 minutes. Rinse and drain the water after 30 minutes.

2. Set the instant pot to saute setting. Add 2 Tbsp of ghee, two cloves of garlic (chopped), one tsp mustard seeds, one tsp cumin seeds, four cardamoms, five cloves, two cinnamon sticks, two Star Anise, one tsp of peppercorns, five Bay leaves, two green chilies, and saute for 30 seconds. 

3. Add one red onion, thinly sliced. Saute the onions until they are mildly caramelized. 

4. Add 3 cups of water, 1 tsp of salt, 1 1/2 Tbsp of lemon juice, 1/4 cup of cashews and raisins.

5. Add the soaked and washed basmati rice, and continue to cook on saute mode for 4 minutes. Keep stirring to avoid any burning.

6. Close the lid and set it to the rice function for twelve minutes).

7. After 12 minutes, allow the rice to remain on the warm mode for about 2 to 3 minutes. 

8. Gently separate the rice and garnish with more roasted raisins and cashews. 

Notes

It is good to soak the rice for at least 30 minutes. It will help the rice cook to the right consistency by not making or more mushy or undercooked.

Adjust the chili and peppercorns according to your taste. It is okay to leave the chilies out as this ghee rice is served with other sides.

All the spices are in added as a whole to give mild flavor to the rice. If the spice used is crushed or powdered, it will bring more intense flavors.

Instant pot settings for rice may vary. Follow the instructions of the instant pot to turn on the rice function mode.
