Description

Watermelon Arugula and Feta Salad is a simple, refreshing, and delicious summer salad. This salad tastes good with a simple vinegarette. Adding vinegar, olive oil, and honey elevates the flavor of this salad. There are several variations to this watermelon Arugula and Feta salad. Some of the most popular additional veggies used in these recipes are cucumbers, tomatoes, and some freshly chopped mint.


Ingredients

Salad Dressing:

Red wine vinegar- 3 Tbsp

Olive oil- 2 Tbsp

Honey- 2 tsp

Black pepper- 1/4 tsp

Salt- 1/4 tsp

Salad:

Arugula or other Greens- 3 cups

Red Onions- 1/4 cup (sliced)

Watermelon- 2 cups (diced or balls)

Feta Cheese- 1/2 cup (crumbled)

Garnish with Salt and Black Pepper if needed.


Instructions

1. Making the salad dressing: In a bowl, add 3 Tbsp red wine vinegar, 2 Tbsp olive oil, 2 tsp honey, 1/4 tsp, and 1/4 tsp black pepper. Mix everything well and set it aside to use on the veggies and watermelon.

2. Either dice the watermelon or use a melon baller to scoop out 2 cups of watermelon.

3. In a salad bowl, take 3 cups of Arugula, 1/4 cup red thinly sliced red onions, and 2 cups prepared watermelon. Add the salad dressing to it it.

4. Add 1/2 cup crumbled Feta cheese to the salad bowl and gently toss. Do not over mix it. The salad is ready to be served. This salad has to be served immediately after mixing. This salad does not store well in the refrigerator.

Notes

1. There are several options to replace the Arugula used in this recipe. Any mixed greens that are available as salad bags are good to use. Baby spinach and baby kale will also work.

2. If Feta cheese is not available, Mozarella chunks will taste equally good. Some of the other replacement is Indian paneer(cheese), and Tofu.

3. Add mint or any other herbs of your choice to give it a more robust flavor.
