Description

Shrimp Scampi recipe is an easy and quick Italian dish that tastes best with minimal ingredients like olive oil, butter, dry white wine, garlic, and some mild spices like crushed red pepper and black pepper. The key to having perfectly tendered shrimp is not to overcook. The mild flavor of the garlicky buttery sauce simmered in wine with the shrimp makes this dish so flavorful and unique. It is okay to replace wine with chicken broth or just water.

Traditionally, the pasta used for Shrimp Scampi is linguine, but angel hair pasta also works. Vegetables that go well with serving Shrimp are Asparagus, green beans, and a mixed variety of greens.

Origin of this dish:  Shrimp Scampi invented by Young’s Seafood, the UK’s leading frozen food manufacturer, after World War II by using Scampi. Scampi is Dublin Bay Prawn or Norway Lobster. But, in the present day, it is replaced by shrimp, but the old name stays.


Ingredients

Water- 2 Quarts

Salt- 1/2 tsp + 1/2 tsp + 1/2 tsp

Linguine pasta- 6 oz (1 3/4 cup dry pasta)

Olive Oil- 1 Tbsp + 1 1/2 Tbsp +1 tsp

Shrimp- 1 lb.

Black Pepper- 1/2 tsp + 1/2 tsp

Red Chili Flakes- 1/4 tsp + 1/2 tsp

Garlic- 4 cloves

Chardonnay Wine- 1/2 cup

Lemon Juice- 2 Tbsp

Parsley- 1/2 cup


Instructions

1. Take 2 quarts of hot water in a pan and add 1 tsp of oil, 1/ tsp of salt, and add 6 oz of linguine pasta. Boil it for 10 to 11 minutes or until it is cooked to al dente.

2. Drain the cooked pasta and save 1/2 cup of pasta water to add to the pasta sauce later. 

3. Take 1 Tbsp of olive oil in a pan, add 1 lb of cleaned and deveined shrimp (preferable jumbo shrimps). Sprinkle 1/2 tsp of salt, 1/2 tsp of black pepper, and 1/4 tsp of red chili flakes. Cook the shrimp on each side for 3 minutes. Transfer the shrimp to a bowl. 

4. In a pan on medium heat, add 1 1/2 Tbsp of olive oil, 2 Tbsp of butter. Once the butter melts, add four cloves of garlic chopped. Saute for a few seconds.

5. Add 1/2 cup of chardonnay wine and cook for 30 seconds. Add 1/2 cup of saved pasta water and 2 Tbsp of fresh lemon juice. 

6. Mix everything well, and then add the cooked shrimp. Now add additional seasonings needed, 1/4 tsp of red chili flakes, 1/2 tsp of black pepper, and 1/2 tsp of salt. In the end, add 1 tsp of olive oil. 

7. Add the cooked linguine pasta. Continue to cook for additional two minutes by mixing the pasta with the sauce well. Garnish with 1/2 cup of parsley.

Notes

1. Preferably extra-large (jumbo) shrimps work well for the Shrimp Scampi recipe. Smaller shrimps tend to cook fast and overcook when mixed with the pasta.

2. Chicken broth or water works well in place of chardonnay wine.

3. Adjust the chili flakes and black pepper according to your taste.

4. Once the pasta is added to the sauce, do not over mix/cook. Tastes better when served immediately.
